Raffles Bali is bringing back Rumari & Friends for its next edition, this time welcoming A, the two-Michelin-starred restaurant from Taipei, for two evenings of collaborative dining on 21 and 22 August 2026. The dinner brings together Chef Gaetan Biesuz of Rumari and Chef Alain Huang of A, shaping a four-hands menu around craftsmanship, seasonality, and a shared respect for ingredients.

At Rumari, the starting point remains Indonesia. The restaurant’s Progressive Indonesian Cuisine is guided by an 80/20 sourcing philosophy, working closely with local farmers, fishermen, and artisan producers while using the country’s biodiversity as the foundation of the menu. Rather than treating Indonesian food as something fixed, Rumari reinterprets familiar references through contemporary technique, allowing heritage, produce, and seasonality to sit in the same conversation.
Chef Alain brings a different but complementary perspective. At A in Taipei, his cooking is shaped by a philosophy he calls CONTINUMIC, a term formed from the words continue and dynamic. It reflects the idea that cuisine should keep evolving, shaped by seasons, ingredients, memory, and experience, while still remaining connected to its roots. Since opening in 2023, A has become one of Taipei’s leading modern French restaurants, earning two Michelin stars within two years.
For this edition of Rumari & Friends, the menu draws from both directions. Rumari’s Indonesian foundation meets A’s contemporary French structure, with both chefs allowing ingredients to lead rather than forcing a single style. The result is expected to be expressive but grounded, built around the character of Indonesia while opening space for a wider culinary exchange.

Guests can choose between two formats. At Rumari, the collaboration is served as a multi-course tasting menu in the restaurant’s dining room. For a more intimate experience, Rumari Counter offers a limited-seat chef’s table setting, placing guests closer to the chefs and the work behind each plate.
Since its introduction, Rumari & Friends has brought chefs from across Asia and beyond to Raffles Bali, creating a dining series that is less about one-off spectacle and more about thoughtful dialogue. This edition continues that rhythm, pairing two restaurants with distinct identities and a similar belief: that discovery often begins with what is already close at hand.
