The ongoing Rumari and Friends four-hands dinner series continues with a compelling culinary collaboration featuring Jakarta’s rising-star restaurant, ESA. Spanning two weekends on 13 and 14 June at Rumari, Raffles Bali, and on 5 and 6 September at ESA in Jakarta, the event will see chef Gaetan Biesuz of Rumari join forces with ESA’s chef Aditya Muskita in their culinary sanctuaries.

Presented under the theme “Two Masters, One Legacy,” this collaborative dining experience becomes a stage for the chefs’ distinct culinary artistry. Chef Biesuz brings a signature style that champions seasonal and locally sourced ingredients, while chef Muskita offers an inventive reinterpretation of elevated Indonesian flavours. Together, they will craft a menu steeped in tradition and innovation, seamlessly reflecting the culinary spirit of Bali and Jakarta.

Renowned for its Indonesian and Southeast Asian cuisines, Rumari celebrates the richness of tradition through a contemporary lens. With over 25 years of culinary experience, chef Gaetan Biesuz weaves the intricate tapestry of Southeast Asian flavours while placing a strong emphasis on seasonality, sustainability, and locally sourced ingredients.

The dedication he shares with his team has not gone unnoticed: Rumari has garnered prestigious accolades, including Tatler Dining Asia’s 100 Best Restaurants, Travel + Leisure’s 25 Best Restaurants in Indonesia, and Wine Spectator’s Award of Excellence (2022–2024). Notably, Rumari also holds the distinction of being Indonesia’s first and only Krug Ambassade, a testament to its commitment to excellence.

ESA restaurant, likewise, finds its foundation in local culinary identity–specifically the Jakartan palate–elevated through inventive technique and modern execution. This approach mirrors Jakarta’s ever-evolving gastronomic scene. At the helm is chef Aditya Muskita, whose global experience spans renowned establishments such as Daniel Boulud in Singapore, Relæ in Copenhagen, Mozaic, and Room4Dessert in Ubud.

Through ESA, chef Muskita reimagines familiar flavours while preserving the essence of the capital’s culinary character. With the chef’s masterful creations alongside co-founders Kevindra Prianto Soemantri and Jessica Eveline’s dedication, ESA earned a coveted spot on Travel + Leisure’s list of 25 Best Restaurants in Indonesia in its debut year.
