Rumari at Raffles Bali is set to welcome Elements, Inspired by Ciel Bleu, for an exclusive four-hand dining experience led by Chef Gaetan Biesuz and Michelin-starred Chef Gerard Villaret Horcajo. For two nights only this June, one of Bali’s most acclaimed dining destinations will host a culinary exchange that bridges cultures, techniques, and gastronomic philosophies.

Taking place on 19 and 20 June 2026, the collaboration marks the latest chapter in Rumari & Friends, the ongoing series that brings internationally recognised chefs to Bali for intimate gastronomic encounters rooted in friendship, creativity, and cultural dialogue. Following its Bali debut, the collaboration will continue in Bangkok this September, creating a culinary conversation that extends beyond borders.
At the heart of the experience is the meeting of two distinctive culinary identities. Rumari, perched above the dramatic coastline of Jimbaran Bay, has become known for its progressive Indonesian cuisine, where local traditions are reimagined through contemporary techniques and global influences. Chef Gaetan Biesuz, director of culinary at Raffles Bali, has championed an approach that honours Indonesia’s rich culinary heritage while presenting it through a refined, modern lens.

Joining him is Chef Gerard Villaret Horcajo, the culinary force behind Elements, Inspired by Ciel Bleu in Bangkok. Originally from Spain, Chef Gerard’s career has taken him through some of Europe’s most celebrated Michelin-starred kitchens, including Ciel Bleu in Amsterdam, Vendôme in Germany, and De Librije in the Netherlands. His cuisine is distinguished by meticulous French technique, layered flavour profiles, and his signature use of dual-sauce compositions that bring contrast and complexity to each dish.
Together, the chefs will present a contemporary tasting menu that explores the intersection of Indonesian soul, French precision, and delicate Japanese sensibilities. Guided by seasonality and craftsmanship, the menu promises a thoughtful exploration of ingredients and techniques, showcasing how diverse culinary traditions can find harmony on a single plate.

The collaboration also brings together two highly regarded dining institutions. Rumari has earned recognition from the 50 Best Discovery list. It also holds the distinction of being Indonesia’s first and only Krug Ambassade. Meanwhile, Elements, Inspired by Ciel Bleu, has maintained its Michelin star for multiple consecutive years, celebrated for its elegant contemporary gastronomy and unwavering commitment to seasonal ingredients.
Set against the tranquil backdrop of Jimbaran Bay, the collaboration offers a rare opportunity to experience the creative exchange between two acclaimed culinary talents from different corners of Asia. The Rumari & Friends four-hand dinner is available from IDR 2,541,000 net per person at Rumari, while the more intimate Rumari Counter experience is priced from IDR 4,235,000 net per person.
