Refreshing new cocktails at Cé La Vi

The iconic rooftop bar, CÉ LA VI, introduces a new cocktail menu crafted by lead mixologist, Andrew Hyman
CÉ LA VI introduces a new signature cocktail menu across its three interlinked venues- The Sky bar, Restaurant and SkyLounge. Lead Mixologist, Andrew Hyman sought inspiration from his surroundings and pays homage to Asia’s diverse flavours. There’s a sense of nostalgia and innovation in his creations- each drink a twist on the old or influenced by experiences accumulated over 20 years of bartending in seven countries.
Featured in the SkyBar series, Old Memories is a spin on the bar classic, Old Fashioned. “Coconut ice cream is a Bangkok street-food favourite! The ice cream was paired with peanuts, sticky rice, pandan noodles, corn and coconut jelly. Old Memories is an ode to this dessert, taking some of the elements to transfer into a cocktail,” Andrew shares. Alternatively, try my choice for the night, the citrusy Golden Age, a twist on the classic Daiquiri infused with nuances of lemongrass and kaffir lime leaves.
Even from the Restaurant series, is artfully presented, dusted with amber Shichimi Togarashi spice and crafted with Monkey Shoulder Whiskey and hibiscus tea. Andrew says, “Even is a drink I created in 2001 as a variation on the New York Sour. I never found the right venue to serve it in until I came to CÉ LA VI. It’s fun, vibrant and spirit-heavy, so it goes down well with our crowd and compliments our contemporary Asian cuisine.”
Each month, each venue offers The Bartender’s Handshake. This unique concoction showcases the mixologist’s creativity, like the verdant Skinny Nut playing with pistachio syrup, aquafaba, with Havana rum and Midori.
The cocktails are priced at $25++ and can be ordered with a sumptuous array of bar bites, of which the avocado sushi rolls (20++) and Burrata di Bufala ($24 ++) hit the right spot.
