Jelajah Rasa Bali: Chef Wisnu Adiyatma Reimagines Indonesian Heritage

Indonesian cuisine is often described through its diversity, but at Double Ikat in Renaissance Bali Uluwatu Resort & Spa, that diversity becomes the foundation of a more intimate dining experience. Jelajah Rasa, created by Executive Chef Wisnu Adiyatma, is a nine-course omakase-inspired chef’s table that explores the country’s culinary heritage through contemporary technique, inviting guests to rediscover familiar ingredients from a fresh perspective.

The Jelajah Rasa Bali experience draws inspiration from the restaurant itself. Named after Indonesia’s intricate double ikat weaving tradition, Double Ikat celebrates a craft where every dyed thread contributes to a complete pattern only once woven together. Chef Wisnu applies the same philosophy in the kitchen, treating every ingredient, cooking technique, and regional story as an essential part of a larger culinary narrative. Rather than reinventing Indonesian food for the sake of novelty, Jelajah Rasa seeks to reveal its depth through careful craftsmanship and thoughtful interpretation.

Hosted in the restaurant’s intimate Kitchen Studio, the experience begins with an element of mystery. Each evening revolves around a hero ingredient, selected by Chef Wisnu to showcase Indonesia’s remarkable biodiversity. Before the first course arrives, diners are presented with the restaurant’s signature Black Box, revealing the featured ingredient in its raw form alongside native spices, roots, and local produce. As the meal progresses, guests watch these humble ingredients evolve into refined expressions of Indonesian cuisine, making the journey as much about discovery as it is about dining.

For Chef Wisnu, Jelajah Rasa is also an opportunity to celebrate ingredients that are often overlooked despite their importance to Indonesian cooking. By pairing traditional produce with modern culinary techniques, he encourages diners to look beyond familiar flavours and consider the stories, regions, and communities behind every dish.

“Indonesia offers an incredible wealth of flavours and traditions, yet many ingredients are often overlooked in everyday dining,” says Chef Wisnu. “Through Jelajah Rasa, we invite guests to experience these ingredients from a fresh perspective, understanding their origins, cultural significance, and potential through contemporary techniques.”

Thoughtfully curated beverage pairings accompany the Jelajah Rasa Bali menu, complementing each course while paying tribute to Indonesia’s own beverage traditions. The result is a dining experience that extends beyond the plate, weaving together food, drink, craftsmanship, and storytelling into one cohesive narrative.

As travellers increasingly seek experiences that connect them to local culture, Jelajah Rasa offers a compelling way to engage with Indonesia’s culinary identity. More than a chef’s table, it is an exploration of heritage told course by course, where traditional ingredients meet contemporary technique without losing sight of their origins. Much like the intricate textile that inspired Double Ikat, every element contributes to a larger picture that celebrates Indonesia’s rich culinary landscape through flavour, craftsmanship, and cultural appreciation.
