Following the successes of Il Ristorante – Niko Romito at Bvlgari Hotels & Resorts in Beijing, Dubai, Shanghai, Milan, Paris, Tokyo, and Rome, a new sister restaurant has recently opened in Bali. The 24-seat venue at Bvlgari Resort Bali offers a contemporary interpretation of classic Italian dining, honouring Italy’s culinary heritage through high-quality ingredients and refined haute cuisine techniques.
Ingredients such as locally caught fish, fragrant vanilla from Kintamani, peppers and tomatoes from Plaga, and herbs from the resort’s garden are incorporated into two tasting menus and à la carte options.

Renowned for his daring simplicity and mastery of Italian regional cuisine, Chef Niko Romito first earned acclaim for Reale, his three-Michelin-starred restaurant in Abruzzo, Italy. In 2017, his first exclusive collaboration with Bvlgari Hotels & Resorts launched in Beijing. Since then, the Tokyo branch has been awarded and retains its prestigious one Michelin star in 2025.

Amid the elegant, open-air dining space, outside guests are invited to savour the four-course I Classici or the seven-course La Degustazione tasting menus, while in-house guests are given the option to order from the a la carte menu. Under the assured leadership of resident chef Alessandro Mazzali, guests can expect a perfectly executed Italian culinary journey, but made in Bali.

The four-course I Classici tasting menu is a tribute to iconic Italian dishes, highlighting regional specialties and coastal flavours. It starts with a selection of Italian specialties such as aspretto (a cold soup made of tequila, black pepper, olive, and tomato) and tuna with fennel. The second course, a smoked ricotta tortellini with zucchini and mint in Parmigiano Reggiano sauce, as well as the main course, a coral trout with scallops, prawns, and tomato, are a delight. A gilded and textural Pane e cioccolato (bread soaked in chocolate and served with chocolate mousse and chocolate crumbles) ends the meal on a high note.

Meanwhile, Il Ristorante – Niko Romito’s signature seven-course La Degustazione tasting menu juxtaposes minimalistic presentation with compelling flavours. Highlights include sweet aka ebi shrimp with pink pepper, parsley oil, and lemon; cold handmade tagliolini with sea urchins, parsley, and chilli; and tender beef fillet with black pepper sauce. The wild berries sorbet with lemongrass mousse, basil, and meringue concludes the feast.
