Padma Resort Legian is hosting a two-night collaboration in June 2026 with Chef Theo Setyo, known for placing Indonesian ingredients and regional dishes in a modern restaurant context while keeping their roots intact. The visit is structured as two distinct formats across the resort’s dining venues, giving guests the choice between a buffet-led dinner built around Indonesian classics and an open-fire sharing night that links the archipelago to SKAI Bar & Grill’s wood-fired style.

The first evening, The Nusantara Table, lands at DONBIU Restaurant on Friday, 26 June 2026, from 6pm to 9.30pm. Described as a four-hands collaboration, the buffet is led by Chef Theo alongside Padma Resort Legian’s Chef de Cuisine Arif Surya Priyanto, with both chefs presenting their own signatures. Chef Arif’s lineup includes Sapi Wagyu Maranggi, Royal Mangut Salmon, and Otak-Otak Bandeng, while Chef Theo brings dishes such as Gulai Kambing, Bebek Bacem, and Ikan Kuah Arsik. Dessert keeps things recognisable with Indonesian sweets including klepon, and the evening also features a selection of Balinese and Indonesian-inspired cocktails served by the glass.

On Saturday, 27 June 2026, the second chapter moves to SKAI Bar & Grill from 5pm to 10pm with Wood-fire Mediterranean Meets the Archipelago, a six-hands collaboration featuring Chef Samuel Barus, Chef Theo, and returning guest chef Manu Gultom. The format begins with a welcome drink and pass-around canapés while guests meet the chefs from 5pm to 6pm, before dinner service takes over. SKAI’s open-fire set-up becomes the centrepiece, with Chef Samuel and Chef Manu bringing Mediterranean cues and Tajima beef selections cooked over wood fire, while Chef Theo adds Indonesian flavour depth linked to traditional pawon techniques. A highlighted plate is Remis Plecing, pairing bulung (fresh seaweed) with scallops.
