Padma Resort Legian sets the tone for the year with a new chef-collaboration series at SKAI Bar & Grill, starting on Sunday, 11 January with SKAI Sunday Brunch ft. LYD Group. The debut edition pairs oceanfront views with a menu guided by the mantra “Flame. Fresh. Mediterranean.”, inviting guests to order freely from an à la carte lineup shaped around fire, smoke, and wood.

Leading the kitchen is Chef Jeremy Blezynski, Group Director of Culinary at LYD Bali Group (La Brisa, La Favela, La Plancha). His approach leans into char and grill notes, using focused techniques to bring out clean flavours. Joining him is SKAI’s Chef Samuel Barus, whose 15 years of experience at Padma Resort Legian underpin a style that values consistency and attention to process. Together, they will craft SKAI Mediterranean Sunday Brunch that balances craft with ease, designed for lingering over multiple small plates and shared courses.
Beyond the food, the service rhythm aims for a beachside pace: four hours of live DJ and saxophone, chefs moving between stations, and a steady flow of plates from the grill. A short drinks list nods to the Mediterranean coast – think herb-led spritzes, citrus-and-olive-oil martinis, and sparkling sangria with seasonal fruit – chosen to mirror the menu’s brighter elements.

The SKAI Mediterranean Sunday Brunch also marks the start of an ongoing 2026 programme at the bar and grill restaurant, with further guest chefs set to bring their own perspectives through the year. Each edition promises a slightly different lens on coastal cooking, while keeping the format casual, social, and rooted in good produce by the sea.
