From now until June 2022, celebrity florist and floral art director Nicolai Bergmann at Four Seasons Hotel Singapore brings an ethereal Floral Weekend Afternoon Tea to Garden@One Ninety

Renowned for his unique style that blends Scandinavian and Japanese design, Nicolai Bergmann is synonymous with sophisticated floral arrangements and unique artistry. And he couldn’t have chosen a better location to bring his floral weekend afternoon tea vision to life than at the Garden@One Ninety, the chic alfresco outdoor terrace that is the lush green extension of the Hotel’s famous One-Ninety Bar.

Enjoy it together with botanical-inspired sweet gourmet creations by the hotel’s executive pastry chef Audrey Yee. A veteran with Four Seasons and graduate of the renowned Le Cordon Bleu School in London, she seamlessly elevates her beautiful creations with edible botanical flowers and other touches. 

The sweets are presented atop a visually stunning hand-arranged wreath of fresh flowers, complete with a heavy fog of dry ice, resulting in a picture perfect moment that literally takes your breath away. Lunar New Year mandarin-shaped Pu-Er tea-infused mandarin crémeux, osmanthus-peach puffs, elderflower-lemon panna cotta, yuzu-matcha cake, Manjari nama chocolate truffles and violet macarons are all almost too pretty to be nibbled on against the beautiful background.

Floral Teapot Cocktails

Complementing the beautiful collection of sweet treats is the savoury line up featuring red prawn roll with avruga caviar, Scottish smoked salmon on mini brioche, along with a petite selection of handcrafted sandwiches such as the dainty Truffle and Portobello Mushroom sandwich, among others.

And it wouldn’t be a relaxing, opulent afternoon tea without the freshly baked vanilla and blackcurrant scones, accompanied by a tangy homemade lemon balm curd, strawberry-rose preserve and Devonshire clotted cream.

Complete the experience with floral-inspired craft cocktails ($24++) by bar manager Gabriel Carlos and head bartender Sophia Kang, served in dainty glass teapots, each topped with fresh herbs and flowers. Citrusy Plumeria, whisky-based Apple Blossom and the floral gin-based Hanami with Roku Gin, peach liqueur, and elderflower tonic, all celebrate the essence of the tropics and complement the botanical theme. 

While a selection of teas is available, the floral and buttery Pink Rose and Marigold Tea is specially curated for this season and complements the afternoon tea well with its delicate nose and mild, sweet flavour.

Floral Weekend Afternoon Tea by Nicolai Bergmann available every weekend (2–5pm) till June 2022 at $48++ per person with a choice of Pink Rose and Marigold Tea, coffee and tea; or $68++ per person with the addition of a choice of a craft cocktail.
