A curated dining experience unfolds across Sentosa with the Mastercard Gastronomy Trail, running now through 31 May 2026. Marking its first collaboration with Sentosa, The Proper Concepts Collective introduces a series of chef-driven creations and dining promotions across the island’s key culinary destinations.
At the centre of the trail are four exclusive dishes by Group Head Chef Samuel Ong, who brings together the signature styles of RAPPU and The Feather Blade with the distinct identities of participating Sentosa venues. Each restaurant presents a one-off creation that reflects both its own culinary direction and Chef Ong’s innovative concept-led approach.
A highlight of the programme is the RAPPU takeover at the kitchen table at W Singapore – Sentosa Cove on 17 May 2026. The one-day event features live performances alongside curated sake pairings.

Market Hall Sentosa
A lively, waterfront dining destination, Market Hall Sentosa channels the spirit of global food halls while staying rooted in local culture. Designed as a communal space, it brings together bold flavours and casual dining energy in equal measure.
For the trail, the spotlight is on the Negitoro Ball with Yuzu Molasses. This bite-sized creation pairs silky negitoro with aromatic leek, za’atar, and rainbow sesame, finished with a bright yuzu molasses served on the side. The result is playful yet balanced—fresh, tangy, and designed for sharing.

Perched atop a hill, The Cliff offers a refined Southern Italian dining experience framed by panoramic sea views. Chef Samuel Ong’s collaboration dish, Burratina with Botan Ebi, layers creamy burratina with sweet botan ebi, finished with smoked salt, paprika, and black pepper pearls. Accents of red chilli, yellow frisée, and purple shiso add both vibrancy and lift. The result is a composition that balances richness with freshness, punctuated by subtle smokiness.
The dish was conceptualised in close collaboration with Chef Bjoern Alexander Panek, Cluster Director of Culinary at Sofitel Singapore Sentosa. Combining Chef Bjoern’s refined expertise with Chef Samuel’s signature conceptual flair, the dish elevates traditional flavours along with innovative textures and visual artistry.
