A new chapter is taking shape in the pastry kitchen at Padma Resort Legian, where Executive Pastry Chef Salman Pathan is bringing a career shaped by some of the world’s most distinguished luxury hotels and restaurants. With more than 16 years behind the pastry counter, his arrival adds a global perspective to the resort’s sweet offerings, while opening the door to a closer connection with Bali’s produce and flavours.

For Chef Pathan, pastry has always been about finding balance between precision and creativity. His experience has taken him from his hometown in South Goa, India, to kitchens across Qatar, Oman, Kuwait, and Japan, working with St. Regis, Anantara, Six Senses, and Four Seasons. Most recently, he was pastry chef at Sézanne, the three-Michelin-starred restaurant at Four Seasons Hotel Tokyo. Now at Padma Resort Legian, the new pastry chef is turning that international experience towards a distinctly local setting.

His first contribution can already be tasted through the resort’s newly launched Bali Heritage Afternoon Tea. The sweet selection has been reworked through a French pastry lens, with local ingredients and flavours providing its sense of place. Rather than treating the island’s produce as an afterthought, the new pastry chef sees it as a source of inspiration for what comes next.
“Bali has a rich culinary culture, and Padma Resort Legian has built a strong reputation for its hospitality. I’m excited to be part of the team and look forward to contributing to one of Bali’s most iconic beachfront resorts,” shared Chef Pathan.
His plans extend into the pastry creations still to come. Single-origin chocolate, Kintamani coffee, tropical fruits, and fresh herbs will feature in his explorations as he works towards desserts that marry international pastry craft with flavours that feel unmistakably rooted in Bali. Familiarity and discovery, he hopes, can sit comfortably on the same plate.

Among the creations already drawing anticipation is his signature French Éclair, awarded a Gold Medal at HORECA Kuwait 2023. At Padma Resort Legian, the pastry will be given a new identity with a Balinese twist, offering a glimpse into how the new pastry chef intends to revisit established classics through the character of his new surroundings.
Away from the kitchen, the new pastry chef is equally keen to get to know the island, with swimming, volleyball, driving, travelling, and exploring Bali’s landscapes among his plans. For Padma Resort Legian, his arrival is an invitation to see where a well-travelled pastry repertoire might go when given a new place to call home.
