Travelogues of the Archipelago: Minangkabau Cuisine Comes to Bali

Indonesia’s culinary landscape takes centre stage at The Westin Resort Nusa Dua, Bali, as the second season of Travelogues of the Archipelago returns for its second chapter. Taking place on 21 and 22 August 2026 at beachfront Ikan Restaurant & Bar, the two-night collaboration brings the bold, aromatic flavours of Minangkabau cuisine to Bali, with guest chef Fernando Sindu of Salira Jakarta joining Ikan’s Head Chef Raviel Sidik.

Part of the resort’s ongoing culinary storytelling series, Travelogues of the Archipelago explores Indonesia’s regional food cultures through collaborations with chefs who preserve, reinterpret and celebrate the traditions of their respective regions. For Chapter Two, the journey heads west to West Sumatra, where generations-old recipes, slow-cooked techniques and layers of aromatic spice form the foundation of Minangkabau cuisine.

Chef Fernando Sindu, known as Nando, brings a perspective shaped by his culinary experiences in New York and across Indonesia. A Culinary Institute of America graduate, he now leads Salira Jakarta, The Union Group’s first restaurant devoted entirely to Indonesian cuisine. His approach explores the ingredients, traditions and stories behind each region, guided by the philosophy of tepo seliro, or empathy.

For this chapter, Chef Fernando joins Chef Raviel in creating a specially curated à la carte menu that connects the traditions of West Sumatra with Ikan’s contemporary, coastal character. Expect a selection of Minangkabau-inspired dishes including Kaleo Domba Muda, Ikan Bakar with Asam Padeh Sauce, a Rendang Series, Itiak Lado Mudo Bukittinggi and Udang Bakar Pariaman.

Set against panoramic views of Bali’s southern coastline, the experience offers more than a meal – it is an opportunity to discover the stories, flavours and culinary heritage of West Sumatra through two chefs’ contemporary interpretations.
