AMICI Bali Takes Over SKAI Bar & Grill for Taste of the Riviera

SKAI Bar & Grill in Legian is hosting Taste of the Riviera, a one-night collaboration with AMICI Bali on Saturday, 25 July 2026. Running from 6pm to 10pm, the evening brings together Chef Alessandro D’Amico, Head Chef of AMICI Bali, and SKAI Bar & Grill’s Chef de Cuisine Samuel Barus, for an endless-flow à la carte dinner shaped around Italian and Mediterranean sharing traditions.

The collaboration connects two different but complementary styles. Chef Alessandro brings AMICI Bali’s modern Italian character, shaped by the wider culinary vision of Chef Enrico Bartolini, whose restaurants have collectively earned 14 Michelin stars. His contribution focuses on familiar Italian flavours treated with refinement and contemporary control. Chef Samuel, meanwhile, brings SKAI’s fire-led Mediterranean approach, adding smoke, heat, and a beachfront ease that suits the venue’s Legian setting.

The format is built around the pleasure of gathering at the table. Rather than a strict course-by-course dinner, Taste of the Riviera encourages guests to pass plates, compare flavours, and let the evening unfold at its own pace. The menu leans into dishes designed for conversation, balancing the richness of Italian cooking with the brighter, wood-fired notes of the Mediterranean.

Highlights include Wagyu Tajima Bresaola, Homemade Ravioli with Wagyu Tokusen Oxtail Ragout, and Prawn Umami, supported by seasonal sides such as Grilled Wild Mushroom and Smoked Leek. To close, Chef Alessandro presents handcrafted desserts inspired by classic Italian flavours, reworked with a modern touch.

The dining experience is paired with Italian-inspired cocktails and a curated wine selection chosen to match the menu. As the night continues, DJ and saxophone entertainment add a relaxed social layer without shifting the focus away from the food.
