Comforting dishes follow, including bird’s nest dumpling in slow-cooked bamboo shoot and pork broth, as well as braised free-range chicken with hairy fig root and Chinese wine. The meal continues with 10-Head South African Abalone and crispy sea cucumber stuffed with Iberico pork, before moving on to stewed lobster with spicy superior light soy sauce served with Japanese ramen in shallot oil.
