This eight-course collaboration dinner offers an exploration of Latin cuisine from two distinct perspectives, focusing entirely on balance, texture, and clarity of flavour.

The first perspective belongs to Chef Gerardo Ramos, the resident executive chef at Adriana Cocina & Bar, whose disciplined approach was shaped by decades of experience across Mexico, the United States, and Indonesia. Chef Gerardo places great value on order, technical precision, and absolute consistency during service. “For me, cooking is about respect. Respect for the ingredients, the culture, and the people we serve. When you keep it simple and honest, the flavour speaks clearly,” he notes, emphasising his commitment to authentic Latin American traditions.

In contrast, Chef Matias Mardones, executive chef at 25hours Hotel Jakarta, follows a more instinctive path, inspired by watching his mother and grandmother cook in their family kitchen. His culinary journey later wound through fast-paced professional kitchens in Chile, Hong Kong, Manila, Macau, and Korea, teaching him to adapt seamlessly across diverse cultures without relying on language. Chef Matias works with bold flavours and spontaneous timing to elicit an emotional response from guests. “I want people to feel something when they take the first bite,” he explains.

The two chefs complement one another during this special collaboration dinner, blending structured heritage with fluid adaptability. Guests can expect a beautifully choreographed menu where ingredients are treated with the utmost care.
