Alila Villas Uluwatu is set to bring two distinct culinary experiences to Bali this June, collaborating with KAWI Ubud and Santanera and spotlighting the island’s evolving food and cocktail culture at Batique Bar and CIRE.

The month begins with Sip, Share, Discover, a one-night-only cocktail collaboration between KAWI Ubud and Batique Bar on 12 June 2026. Part of the Indonesia’s Finest Bar Series, the evening brings together two names shaping Indonesia’s contemporary cocktail landscape: Bagus Aribowo of KAWI Ubud and Sapta of Batique Bar.

Known for his culinary-driven approach to mixology, Bagus Aribowo has built a reputation for cocktails that weave Indonesian ingredients with the precision and restraint of Japanese bartending. His creations at KAWI Ubud often explore memory, place, and heritage through layered flavour profiles and thoughtful presentation. Alongside him, Sapta – a Top 8 Finalist at World Class Diageo Indonesia – continues Batique Bar’s philosophy of translating local ingredients into refined, sensory-driven cocktail experiences.
Set against the golden-hour backdrop of Uluwatu’s cliffs, the collaboration promises more than a guest shift. Framed as an elevated social ritual, the evening invites Bali’s discerning cocktail crowd, in-house guests, and the barhopper community into an immersive atmosphere where storytelling and craftsmanship meet in the glass.

In addition to the collaboration with KAWI Ubud, a week later, Alila Villas Uluwatu turns its attention to the dining table with A Taste of Santanera at CIRE, a two-night culinary pop-up taking place on 19 and 20 June 2026. The collaboration sees Canggu favourite Santanera bring its bold Latin-inspired cuisine to CIRE through a specially curated à la carte experience.
Recognised for blending Colombian heritage with global influences and Bali’s exceptional local produce, Santanera’s menu at CIRE will highlight expressive flavours, open-fire cooking, fermentation techniques, and fresh seafood interpreted through a contemporary Latin American lens.

Highlights from the collaborative menu include Caribbean Curried Spanner Crab with brown butter and toston, Scallop Tostada with green sambal and tarama, Carrara Wagyu Intercostal with salsa roja and rice arepa, and Char-Grilled Octopus with cabbage and chili lemon emulsion. Desserts such as Passion Fruit Sorbet with mango granita and Churros with dark chocolate, vanilla ice cream, and dulce de leche complete the experience.
