W Bali – Seminyak Brings Fu House to Starfish Bloo for a Thai-Led Sunday Brunch

W Bali – Seminyak is adding a Thai accent to its weekend line-up with a one-day Sunday Brunch collaboration featuring Fu House, set for Sunday, 24 May 2026 (12.00–15.30) at Starfish Bloo. The concept centres on bold Thai flavours shaped by smoke and fire, served with ocean views and the easy pace Starfish Bloo is known for.

Fu House, a dining concept by 8 Degree Projects, has built its reputation on Thai cooking that leans modern without losing its foundations. Led by Chef Aaron, the kitchen blends wood-fired notes with contemporary technique, keeping the flavour profiles clear: heat, sweetness, and acidity that land in balance rather than in excess.

The featured menu highlights sit in that register. Goat Panang Curry arrives with confit shallots and coconut milk, built for warmth and depth. Beef Massaman Curry leans richer, with potato and roasted peanuts giving the dish a steady, nutty base. For something brighter, Kingfish sashimi is paired with coconut dressing and burnt chilli, while Som Tum uses jicama and peanuts for crunch and lift. Beef Larb brings a savoury, spicy edge, finished with rice crispy and a spicy aioli for texture.

Rather than treating Thai food as a theme, the collaboration reads as a focused kitchen swap – one restaurant’s style landing in another’s dining room for an afternoon. The result suits groups who like to share and compare dishes, with plates designed to move from fresh and light into deeper curry notes. Starfish Bloo’s seaside setting does the rest, keeping the mood relaxed, open-air, and centred on the table.
