The concept is kept casual and beach-facing: cocktails built for warm weather, a menu of familiar grill plates, and a setting that suits sunset rather than spectacle.
SKOOL Kitchen is known as much for bar culture as it is for food. For this volume, Deva leans on the shrub technique – a balancing act of fruit, sugar, and vinegar that adds lift and structure without turning drinks heavy. The method suits Bali’s early evening pace, where brightness and bite can carry a cocktail from first sip through to the last plate.
A key ingredient for the SKAI SKOOL mixology takeover is mengkudu (noni), a local fruit often passed over because of its bitter, astringent edge. Deva’s brief is to make it easier to enjoy, using shrubs to soften the profile while keeping its distinct character intact.
