COMO Hotels and Resorts soon to mark its debut in Bordeaux, one of France’s most esteemed wine regions, with the opening of its new hotel, COMO Cordeillan-Bages, on 1 May 2026. Developed in close collaboration with the Cazes family, owners of Château Lynch-Bages, the new establishment reflects COMO’s family-led ethos, where generational heritage is expressed through refined artisanship within a reimagined 19th-century estate.

Set among the rolling vineyards of Pauillac in the heart of Médoc, the hotel becomes COMO’s third address in France, rooted in the enduring traditions of vineyard life. Italian designer Paola Navone, known for her work on COMO Le Montrachet, leads the transformation, shaping the new hotel’s 28 rooms and suites alongside a restaurant, a 25-metre outdoor pool, gym, and sauna. The design balances COMO’s signature understated luxury with a strong sense of place, where historic character is quietly enlivened with contemporary touches and a considered material palette.

“The Médoc’s heritage and craftsmanship resonate strongly with COMO’s values and with COMO Cordeillan-Bages, we will reimagine Bordeaux’s traditions through a contemporary expression of quiet luxury in the heart of the Médoc,” stated Olivier Jolivet, CEO of COMO Holdings.

The new hotel offers rare, behind-the-scenes access to Bordeaux’s wine world, made possible through partnerships between COMO and Château Lynch-Bages. Guests staying at the hotel are also within easy reach of some of the region’s most celebrated vineyards, including three of Bordeaux’s five First Growth. Just a short six-minute stroll leads into the village of Bages, where everyday life unfolds through artisanal boutiques, bistros, and wine shops, lending the area its quietly charming, rustic rhythm.

For those drawn to the great outdoors, the Médoc landscape stretches from vine-covered plains to pine forests and the Atlantic coastline, while the hotel sits along the storied Route des Châteaux, ideal for scenic exploration.

Otherwise, exploring the hotel will reveal its own allure through its culinary offering, led by newly appointed Chef-Consultant Fabien Ferré. Known as the youngest chef to helm the three-Michelin-starred La Table du Castellet, Ferré brings a refined yet expressive approach, shaping menus that elevate the experience while remaining rooted in the region’s rich gastronomic heritage.

“I had this desire to explore new creative projects. Partnering with COMO felt completely natural, as we share strong values and a passion for excellence. Orchestrating the revival of this iconic restaurant, after so many years of closure, is an especially exciting opportunity,” said Chef Ferré.

At the new hotel, menus champion seasonal, locally sourced ingredients with a gentle Atlantic influence, where seafood, garden produce, and meats shape a refined yet grounded expression. Chef Ferré presents the experience through a three- to six-course sequence for lunch and dinner, served in a natural light-filled dining room overlooking the vineyards. Open from Friday to Tuesday, the restaurant is further distinguished by a cellar of nearly 1,600 labels, celebrating the depth and character of the region’s terroir.
