Travelogues of the Archipelago Season 2 at The Westin Resort Nusa Dua, Bali

There is a certain poetry in movement – of flavours, of people, of stories carried across islands. At The Westin Resort Nusa Dua, Bali, that movement takes shape once more as Travelogues of the Archipelago returns for its second season, opening with a journey that traces the bold, layered soul of Betawi cuisine from Jakarta to Bali.

Set along the shoreline at Ikan Restaurant & Bar, the three-day culinary residency from 2 to 4 April 2026 unfolds as both a continuation and a deepening. If the inaugural season introduced the concept, Season 2 refines it – placing collaboration, identity, and narrative at the forefront of the dining experience.

At the heart of this opening chapter is TAMU Restaurant, part of TOMA Group, led by Chef Arief Rachman. His interpretation of Betawi cuisine moves between memory and modernity, where aromatic spices, slow-cooked depth, and textural comfort are elevated with a measured, contemporary hand. These are dishes that feel both rooted and reimagined – Jakarta’s culinary heritage told with clarity and confidence.

Running parallel is the bar takeover by OSMO Bar Jakarta, helmed by Azzabella Putri. Known for its irreverent “Bastardized Classics,” OSMO’s approach to mixology injects a vibrant counterpoint into the experience. Local ingredients are reframed through modern techniques, resulting in cocktails that are as playful as they are precise with each sip designed to both complement and contrast the richness of Betawi flavours.

Beyond the takeovers, the collaboration extends into a thoughtfully composed à la carte menu, created by Chef Mohamad Raviel of Ikan alongside Chef Arief. Eighteen dishes in total, split evenly between the two chefs, form a dialogue on the plate, where coastal Bali meets metropolitan Jakarta in a seamless exchange of ideas and techniques.

Against the backdrop of Nusa Dua’s coastline, this opening chapter of Season 2 feels both transportive and grounded

What makes Travelogues of the Archipelago compelling is not only its culinary ambition but its sense of purpose. Conceived as a platform to celebrate Indonesia’s regional diversity, the series invites chefs and bartenders to translate their origins into immersive experiences. It is less about replication and more about interpretation on how tradition evolves when placed in new contexts.

Against the backdrop of Nusa Dua’s coastline, this opening chapter of Season 2 feels both transportive and grounded. The sound of the ocean, the rhythm of service, the interplay of spice and spirit – all come together to create a dining experience that is as much about place as it is about palate.
