At Double Ikat within Renaissance Bali Uluwatu Resort & Spa, a new culinary narrative unfolds with Jelajah Rasa, an omakase-inspired journey designed to surprise and delight discerning diners. Long recognised for championing Indonesia’s diverse gastronomic heritage, the restaurant once again places local cuisine at centre stage, this time through an intimate nine-course experience at the chef’s table – immersive, expressive, and unapologetically rooted in tradition.

Led by Executive Chef Wisnu Adiyatma, Jelajah Rasa – as the name implies – invites guests to explore flavours that are distinctly Indonesian. Seasonal produce and quality local ingredients anchor the whole experience, prepared with modern techniques that enhance rather than overpower their natural character. As with any omakase-style dining, guests place their trust in the chef and allow the courses to unfold as intended.
Adding an element of intrigue, each evening begins with the reveal of a mystery hero ingredient, which becomes the key ingredient across all nine dishes. The result is a thoughtful yet approachable experience that celebrates Indonesia’s culinary richness in a way that feels both authentic and refreshingly new.

Stepping into the restaurant, guests are welcomed by a warm, inviting setting where traditional artisanship fills the nooks and corners, gently balanced with contemporary touches. At its heart lies the Kitchen Studio, the stage for the experience, where each course unfolds with a quiet sense of theatre.

Across nine courses, the previously revealed hero ingredient appears in thoughtful variations, presented in its purest forms – whether roots, leaves, or spices – all locally sourced. Each dish highlights its character with care, allowing familiar flavours to feel newly discovered. Complementing the menu is a curated beverage pairing, designed to echo the same cultural depth and authenticity found on the plate.
