COMO Uma Canggu marks World Food Day with COMO Journey: Taste of the Land, a two-day programme on 16 to 17 October created with MODENA Culinaria to spotlight thoughtful cooking, local sourcing, and minimal waste.

The opening evening will centre on a Mystery Box Chef Battle at COMO Beach Club. The cook-off will feature COMO Uma Canggu’s Executive Chef Colin McSherry and MODENA Culilnaria’s own Chef Ami of MasterChef Indonesia. Working with reef fish and produce from nearby suppliers, both chefs are ready to prepare dishes over MODENA’s induction and convection set-ups, aiming to use each ingredient from head to tail. The format invites guests to see technique, restraint, and decision-making up close, with an emphasis on flavour, seasonality, and resourcefulness.

Earlier that afternoon, COMO Conversation – Nourishing Beyond the Kitchen will be gathering voices from the community at the COMO Penthouse. Moderated by Sandra Pramitha, the panel will explore food security and the role hospitality can play in supporting better systems. Speakers include Vania Herlambang, Winda Aulia, and Lelie Liana, offering perspectives from advocacy, operations, and supply chains.

COMO Journey: Taste of the Land

On 17 October, a four-hand, six-course dinner takes place at COMO Beach Club. Chef Ami will present courses such as Jumpa Jampi and Wirangi, while MODENA Culinaria’s pastry chef Bella will close with Ramoe Mantra. Chef McSherry counters with plates like crab and squid-ink linguine, fish bouillabaisse, and grilled mackerel with tartar, cucumbers, chard bone, and shiso dressing. Story cards accompany each course to map ingredients, origins, and kitchen choices, reinforcing the event’s aim to connect plate to place.

Across the two days activities, Taste of the Land will frame dining as a conversation between chefs, growers, and guests about what it means to cook responsibly on the coast of Bali.
