PARKROYAL COLLECTION Marina Bay, Singapore is rolling out a trio of culinary experiences in honour of Singapore’s 60th birthday. Skyline, the hotel’s rooftop restaurant, has the best seats in the house to view the fireworks, Red Lions aerial display, and flag flypast on 9 August. The all-you-can-eat buffet will feature local delicacies and barbecued favourites, which diners can enjoy with sweeping Marina Bay views.
There are celebrations throughout the month, too, such as Peppermint’s Peranakan Heritage Buffet, running from 18 July to 10 August 2025 and featuring heritage-inspired dishes like assam king prawns and ayam buah keluak. On Friday and Saturday dinners, don’t miss the Live Durian Station offering free-flow Mao Shan Wang, Red Prawn, and more.
Meanwhile, at Portman’s Bar, indulge in a Singapore-inspired Afternoon Tea featuring kopi scones, pandan financiers, and moreish savouries like mini yam baskets and rojak-style you tiao. Pan Pacific Singapore
Look forward to Pan Pacific Singapore’s vibrant lineup for SG60. At Plume, the hotel’s destination cocktail bar, mixologists take on the SG60 Showdown Challenge — a spirited six-minute, five-cocktail test of speed and skill — where if you order all five signature cocktails at once and if they aren’t served on time, your next cocktail is on the house.
Edge, the hotel’s buffet restaurant, will present Flavours of the Lion City from 10 July to 9 August 2025, showcasing local delights like wok-fried hokkien mee in opah leaf, durian kueh pie tee, and salted baked crab. At award-winning Cantonese restaurant Hai Tien Lo, tuck into a spread of handcrafted dimsum or savour the iconic Peking Duck, available from 1 August until 30 September 2025. Singapore’s colonial heritage takes centre stage at Colony, the hotel’s all-day dining restaurant. From now to 7 August 2025, every Monday to Thursday, guests aged 60 and above can enjoy a special lunch buffet at $60 per person with every three full-paying adults (limited to two redemptions per table with valid ID, indicate the code “SG60PMG” when making reservations). During the National Day weekend from 8 to 10 August 2025, diners can also indulge in special, local-inspired creations such as Otah-Stuffed Salmon Wellington and Beef Rendang Lasagna, alongside Colony favourites like laksa, Singapore lobster Hokkien mee, and chilli crab. At the Michelin-starred Summer Pavilion, Chef Cheung Siu Kong presents a six-course National Day menu (available 4 to 10 August 2025) featuring Cantonese reinterpretations of local classics, including a reimagined nasi lemak with barbeque stuffed chicken wing and XO glutinous rice. Tiong Bahru Bakery
Tiong Bahru Bakery (TBB) celebrates Singapore’s 60th National Day with a first-of-its-kind collaboration with heritage hawker centre Lau Pa Sat. From 1 to 31 August 2025, all TBB outlets nationwide will feature the SG60 collection, a limited-edition menu of five pastries that transform local favourites like satay, nasi lemak, Milo Dinosaur, and Teh C into buttery French viennoiserie with a local twist. Highlights include the Satay Beef Croissant with fork-tender beef and pickled vegetables, the indulgent Satay White Chocolate Kouign Amann, and the Nasi Sambal Danish with coconut rice, mornay sauce, egg, and sambal. Central to the collection is a custom satay sauce co-created with Lau Pa Sat, crafted to go with both sweet and savoury creations. Coriander Leaf
Coriander Leaf shines the spotlight on homegrown flavours with its SG Local Produce Dinner, a one-night-only culinary experience happening on 21 August 2025. This special five-course menu takes diners on a journey through Singapore’s own backyard, celebrating the island’s vibrant produce, from sustainably farmed seafood to locally cultivated mushrooms, herbs, and greens. Each dish is designed to showcase the richness and creativity of the evolving local food scene. From 8 July to 31 August, Chef Louis Han of GU:UM pays heartfelt tribute to the country he now calls home with a special SG60 menu that combines Singaporean flavours with the chef’s signature Korean flair. Celebrating not only the nation’s 60th birthday but also his own journey in Singapore, where he met his wife and now leads three acclaimed restaurants, the limited-time menu is a love letter to the Lion City and the people behind GU:UM. Expect playful, inventive dishes like Gochujang Soft Shell Chili Crab with Korean tteok (swapping out the usual mantou for traditional Korean rice cakes), charcoal-grilled Dalkochi Satay skewers with ssamjang peanut sauce, and Mandu Wings stuffed with juicy dumpling filling. The crowd-pleasing Uncle Lulu’s Fried Rice comes in a sizzling hot stone pot, with kimchi and grilled squid, while the Red & White Bingsu comprising watermelon, hongcho, and yoghurt cream provides a refreshing National Day-inspired finale. Tóng Lè Private Dining
Tóng Lè Private Dining, the city’s only revolving restaurant, will be presenting a special SG60 menu from 1 to 9 August 2025. Dubbed A Gastronomic Salute, the six-course menu ($258 per person) offers a refined take on local flavours, starting with Tastes of One Nation — four starters that represent the country’s multicultural roots, with dishes like chicken satay, Kaluga caviar, minced lobster, and tea jelly, and pan-fried crab meat patty with chilli sauce.
The menu continues with a nourishing double-boiled conpoy soup with scallop from Hokkaido; baby spinach dish that marries the buttery savouriness of French lobster bisque with the complex umami of fish maw; and a smoky wok-fried Saga-gyu which sees perfectly marbled Saga beef brightened with cherry tomatoes, zucchini, and a dash of Chinese aged vinegar sauce. Local Chef Dillon Ng of Foliage and Chef Akane Eno of the Japanese fine-dining kappo restaurant Ichigo Ichie will team up for an exclusive National Day four-hands dinner. Hosted at Ichigo Ichie’s intimate Claymore Connect Space, the eight-course menu ($368 per person) blends the perspectives of Chef Dillon, a true Singaporean at heart, and Chef Akane, who moved to Singapore a decade ago and has since made it her home. Available from 8 to 10 August 2025, highlights from the menu include Tarabagani Laksa Croquette, featuring Hokkaido king crab paired with rich coconut laksa sauce, and Ayu Thunder Tea Rice, Chef Eno’s take on a local favourite with grilled sweetfish and maguro dashi.
