When a construction work of a new villa at The edge Bali commenced in 2013, little did the team know that they would unearth a subterranean surprise. A sizeable cave made of wondrous formation of stalactites and stalagmites were found six and a half metres underground. Since then, the 25,000-years-old natural wonder was carefully preserved and remains closed to the public until now.

A special place requires a specialist and that’s where chef Ryan Clift takes over. The Cave by Chef Ryan Clift will open its doors on 19 May. The cavernous space itself has been transformed by Ushers by Design who successfully created an intimate and otherworldly dining destination.

Open for lunch and dinner, the 22-seat subterranean restaurant serves a seven-course tasting menu with wine and cocktail pairing options. Savour Clift’s prowess in creating vibrant menu out of freshly produced and premium ingredients, a flavourful experience akin to his restaurant Tippling Club in Singapore.

There are two fixed menus to choose from: the Classic and the Vegetarian. With the Classic, expect dishes such as Savoury Doughnut, Cured Trout Belly, Steak Tartare, Hokkaido Scallop, Foie Gras Cheesecake, Tajima Wagyu, and more. Despite not being able to accommodate guests with dairy, soy and vegan allergies or intolerance, vegetarians are lavishly in for a treat. Find Carrot Tartare, Whipped Burrata, Charred Cauliflower, Risotto, and more plant-based delights when you dine at The Cave. Marvel at the projections mapping on the cave’s wall during the meal for a truly memorable dining experience in Bali.

Lunch is from 12.30pm to 2.30pm (Thursdays to Sundays)

Dinner is available daily with two seatings: 5.30pm to 7.30pm, and 8.30pm to10.30pm.

The seven-course tasting menu is priced at Rp1,400,000++/person or Rp3,800,000++/person with wine and cocktail pairings
