Capella Singapore’s Mediterranean restaurant, The Knolls, will be offering a three-course lunch ($85/person) and a four- ($95/person, Christmas Day) or five-course dinner ($168/person, Christmas Eve). Guests can expect delectable dishes like Slow-Cooked Stuffed Turkey Breast and Homemade Gravalax with Oscietra Caviar and Apple Carpaccio. The set meals will conclude with a festive dessert spread of Christmas pudding, Rum-Soaked Raisin Stollen, White Chocolate Mousse and more.

Enliven the festivities with special cocktails ($22) or mocktails ($18) from Bob’s Bar, or join the iconic Christmas Brunch ($208/person and $238/person with free-flow alcohol) at the resort’s Grand Ballroom Foyer. The 10th rendition of the brunch will be one crowd-puller as there’s something for everyone from Christmas carolling, a magic show, electric animal rides, face painting stations and a Gingerbread Man cookie centerpiece. Live stations of Roasted Christmas Turkey and Dill Crusted Salmon complement the decadent spread of fresh seafood, salad bar and traditional desserts like White Chocolate Mousse, and Strawberry and Raspberry Yule Log.

For a cosier and more intimate affair, Cassia is also offering a five-course lunch ($98/person) and six-course dinner ($158/person) on the 24 and 25. Enjoy signature dishes like Baked Spare Rib with Champagne Sauce; for dinner patrons, indulge in Baked Lobster with Black Garlic, and Pan-Fried Foie Gras with Japanese Sake, Asparagus and Black Caviar. Otherwise, head to Chef’s Table for a quaint Festive Afternoon Tea ($52/person) to savour a collection of sweets and savouries. The home-style kitchen will also be preparing festive hampers: the Capella Hamper ($398+) includes the signature Panettone, Christmas Stollen, Fruit Cake, assorted festive snacks and a bottle of Billecart-Salmon Brut Réserve NV Champagne.

New Year’s Delights

Heritage flavours are the focus at Cassia’s six-course New Year’s dinner (31 December and 1 January, $$168/person). Executive chef Lee Hiu Ngai presents a bevy of premium dishes with a modern twist, including Braised Fish Maw, doused in an abalone sauce and served with whole Japanese flower mushroom, and a peppery Wok-Fried Australian Wagyu Beef. Alternatively, feast to your heart’s content at The Knoll’s Dinner Buffet ($168/person without alcohol, $198/person with alcohol) where highlights include a stunning Beef Wellington, and Sustainable Mussels Marinières cooked à la minute.

Start the year right with the Grand Countdown Party ($228/person) at the Grand Ballroom. Befitting of its island locale, the party will be a Hawaiian-inspired affair, complete with tropical drinks, exciting activities and a sumptuous spread of light bites. Book a seat at The Knolls’ New Year’s Day Brunch ($138/person without alcohol, $188/person with alcohol) to fuel the body after a night of merriment.
