Like chef LG Han, Capella Ubud’s Italian chef Nicola Russo prefers to serve his creations using indigenous produce from neighbouring farms and the sea. He spearheads the resort’s culinary attractions, Mads Lange and Api Jiwa, where freshly-made Asian fares with full-bodied flavours are warranted.
