At Oliverra, the signature Mediterranean restaurant of Umana Bali, LXR Hotels & Resorts, gastronomy takes on a new rhythm. The resort unveils Mixology Collective, an innovative dining series that celebrates the dialogue between haute cuisine and cocktail artistry. For its debut edition, Oliverra collaborates with Taketo Utsunomiya, the visionary head bartender of NOTTE Uluwatu, for an exclusive six-course pairing dinner that reimagines how flavour, texture, and craftsmanship intertwine.

As the boundaries between kitchen and bar continue to blur, Mixology Collective places both chef and bartender at the forefront of creative expression. Each edition invites a leading figure in mixology to pair with Oliverra’s culinary team, exploring how cocktails can echo, contrast, or elevate fine dining.

The inaugural dinner unfolds on Friday, 7 November 2025, at 6pm, beginning with a refreshing Verde Gin Tonic before guests embark on a six-course journey of taste and technique. Highlights include Oysters paired with a NIKKA Coffey Gin martini, Scallop with a passionfruit-yuzu-bamboo cocktail dusted with wasabi salt, and Ravioli served alongside an Aperol and vermouth highball. For the main course, coffee-smoked beef cheeks meet the smoky depth of KOCH Mezcal and Bali’s LIMO liqueur, culminating in a serene finish – a whiskey and Earl Grey tea cocktail, fragrant and contemplative.

“Pairing cocktails with a tasting menu is like creating music – each course is a note, and the drinks are the rhythm,” shares Taketo Utsunomiya. “I wanted to craft cocktails that don’t just accompany the dishes but reveal new layers of flavour, making the journey more memorable.”

Priced at IDR 1,700,000++ per person (food only), guests can enhance their evening with the full pairing experience, including aperitivo, dinner, and cocktails, for an additional IDR 800,000++.
