Flavours of Nikkei & Latin American Take Centre Stage at Padma Resort Legian

This October, Padma Resort Legian invites guests on a rare culinary journey with Flavours of Latin & Nikkei, a two-day dining series that unites two South American chefs whose heritage and artistry converge in Bali. Guest Chef Silverio Martinez of CasaLena, Jakarta, joins forces with Chef Juan Carlos Jara Eyzaguirre, Executive Sous Chef of Padma Resort Legian, in an exclusive collaboration that promises bold creativity and soulful storytelling through food.

Chef Silverio, celebrated for his mastery of wood fire cooking and Latin American flavours, brings with him a rich career that has spanned acclaimed kitchens across Asia and Mexico. Currently Head Chef at CasaLena, his menus embody the depth and vibrancy of Latin cuisine, reimagined with contemporary finesse. Complementing him is Chef Juan Carlos, the creative force behind TENKAI Japanese Nikkei Restaurant. Born in Peru and trained across Brazil, China, Uruguay, Turkey, Qatar, and Indonesia, Juan Carlos crafts Nikkei dishes that are deeply personal, such as Parihuela Udon inspired by his father’s favourite meal, Ise Ebi Popcorn with lobster tempura and passionfruit, and Tako, slow-cooked octopus with Peruvian sauces. This collaboration marks a milestone for Juan Carlos, as his first major event since joining Padma Resort Legian.

The two chefs share more than a South American background – they share a passion for bridging heritage with innovation. Their collaboration unfolds over two distinct evenings. On Saturday, 4 October 2025, TENKAI becomes the stage for Izakaya Night, a lively celebration of Japanese Nikkei flavours touched with Latin flair, accompanied by acoustic guitar and vocals. Guests will enjoy a free-flow Izakaya-style menu for IDR 480,000++ per person. The following evening, Sunday, 5 October 2025, the spotlight shifts outdoors to The Deli Grass Lawn, where a Latin American Surf & Turf barbecue comes alive with smoky, indulgent flavours and DJ-curated Latino rhythms, offered as a semi-buffet with prices based on selected dishes.
