With just 10 coveted seats set along a sleek counter, this is less restaurant and more theatre – one where the script is never fixed, and every evening unfolds as a one-night-only performance.

Unlike Rumari’s Steps Dinner or its à la carte selection, the Counter has no predetermined menu. Instead, Director of Culinary Gaetan Biesuz and his team work with the 80/20 philosophy – 80 percent local bounty, 20 percent imported when essential – to craft an entirely unscripted menu each night. Think of it as an ongoing love letter to seasonality, freshness, and surprise. One evening may open with a delicate reinterpretation of the day’s catch; another may lean into earthy Balinese produce elevated with a flourish of rare spices. No two nights are ever the same, though a returning favourite might find its way back – like an old friend dropping by unannounced.

At the Counter, every course is plated in front of you, every garnish placed with intention. There is no kitchen wall here, only dialogue. Chefs share the stories behind each ingredient – where the crayfish were caught, how the torch ginger was processed, why a particular herb deserved its moment in the spotlight – while sommeliers weave in pairing suggestions that transform dishes into narratives. The result is a dining experience that is not only consumed but also lived.

Seating is available Wednesday through Sunday, from 6pm to 10pm. Only 10 seats per evening, because some stories are best told quietly, one guest at a time.
