The name SIKI carries a dual meaning at the heart of its identity. In Balinese, Siki means one, representing unity and the philosophy of coming together, of ideas, of flavours, of people. Meanwhile, in Japanese, Shiki refers to the four seasons, symbolising rhythm, elegance, and nature’s subtle changes. It’s this beautiful cross-cultural symmetry that underpins SIKI’s vision: a place where Japan and Bali don’t just meet, but blend into something entirely new.

Chef Vincent Hiew, formerly of Nobu and now executive chef and chef-owner of SIKI, brings a quiet confidence to this new project, and Japanese finesse to Bali. His culinary path, shaped by years spent exploring global flavours, has culminated in a menu that is simultaneously refined and grounded. “I want every guest to experience the delicate artistry of Japanese cuisine infused with the rich, soulful flavours of Bali,” says Hiew.

SIKI’s Chef’s Tasting Menu is a curated harmony of flavour, crafted to guide diners through this cross-cultural narrative. One standout is the Tri Taluh, a showstopping small plate that features a sous-vide omega egg yolk, nestled between slices of toasted brioche, crowned with ikura and caviar. The interplay of creamy, briny, and crisp textures is more than technique; it is storytelling.
