Di Mare at Karma Kandara: A Taste of the Italian Riviera Above the Cliffs of Uluwatu

Perched high on the sun-kissed limestone cliffs of Uluwatu, di Mare at Karma Kandara offers an immersive culinary journey framed by the breathtaking blues of the Indian Ocean. Part of Karma Kandara’s curated #ExperienceKarma program, di Mare blends Mediterranean elegance, Italian culinary heritage, and Bali’s tropical soul into a dining experience that is both refined and relaxed.

Following its recent transformation, di Mare now channels a breezy Amalfi Coast vibe. Natural wood tables, marine-blue and white cushions, aquatic tiles, and cascading linen chandeliers set a scene of understated luxury. With only 50 seats, the space feels intimate yet effortlessly glamorous – the perfect backdrop to the magical sunsets hours.

Under the guidance of chef Stefan Thietz, whose coastal Cape Town upbringing instilled a love for fresh seafood and elemental cooking, di Mare’s kitchen celebrates balance, simplicity, and flavour integrity. Working alongside Karma Group’s executive chef Joseph Antonishek, the team presents a signature menu that honours Italian culinary traditions while embracing creative inspirations from across the Mediterranean. Guests can expect wood-fired pizzas, handmade pastas, and creamy risottos alongside rare gems from chef Joseph’s Italian travels, including ancient Roman-style seabass with garum and lovage, rustic Bolognese, and Campanian-inspired crispy chicken with olives and grapes over soft polenta. Bespoke tasting menus are also available, tailored personally to each guest’s palate.

Desserts bring a playful reimagining of Italian classics. The signature A Brillo marries espresso martini with velvety gelato, while a limoncello cheesecake captures sunshine on a plate. The hazelnut mascarpone semifreddo with honeyed grapes and delicate pasta fritta is an indulgence worth lingering over.

Adding rhythm and colour to the week, di Mare hosts a lively line-up of signature dining events. On Mondays, Paella & Sangria nights fill the air with the scent of saffron and the energy of live Flamenco beneath the stars. Wednesdays usher in the regal Rayunan Royal Dinner, where an Indonesian feast is paired with traditional Balinese dance against a dramatic ocean backdrop. Thursdays bring Giro Beatzza, an all-you-can-eat pizza celebration served giro-style, fuelled by DJ Manu-L’s music and culminating in the indulgent Pizzookie.
