Bel Étage at The St. Regis Jakarta welcomed Jesselyn Lauwreen – the youngest champion of MasterChef Indonesia Season 8 – for a two-day MasterChef Brunch on 15 and 16 November 2025. Known for a style that is bold yet precise, Jesselyn brought a menu shaped by formal training at Le Cordon Bleu Dusit and Le Cordon Bleu Paris, and by her work across kitchens that balance technique with personal narrative.

Often called the ‘Thai Queen’ for her affinity with layered spice and citrus-led profiles, Jesselyn has since channelled her ideas into Amoré Líora, a concept that reframes comfort through unexpected combinations. Examples range from Asian-style pizzas topped with paratha, egg yolk jam, kimchi, and salmon roe, to a Tom Yum Bouillabaisse with lobster tail, scallop, and a fragrant tom yum bisque.
For this weekend at Bel Étage, brunch became a canvas for that approach. The service was set to move through courses that echoed Jesselyn’s signatures of clean acids, gentle heat, and textures that carried a dish without overpowering it. The intent was less about spectacle and more about how dishes read together: a sequence that showed where the chef had been, and what she enjoyed cooking now.
