Opened in 2023 as a tribute to the royal kitchens of Awadh, SanSara at Grand Copthorne Waterfront Hotel Singapore re-opened in August 2025, inviting diners to rediscover the richness of North Indian cuisine through a refined, sensory-led experience.
SanSara, the North Indian dining destination tucked along Robertson Quay, re-launched on 1 August 2025, presenting an elegant new design alongside a revitalised menu that honours culinary heritage while embracing contemporary craftsmanship.
Inspired by the ancient culinary traditions of Awadh and modern references to India’s majestic palatial design, SanSara offers an immersive journey through North Indian cuisine that feels both authentic and assuredly modern.

Drawing inspiration from royal kitchens across the northern frontiers, the restaurant now dives deeper into regional narratives from Punjab and Kashmir to Lucknow. The updated menu reflects this evolution, pairing time-honoured techniques with contemporary flair.
Seafood-forward dishes take centre stage in this chapter, including spiny lobster cooked with turmeric, fenugreek and coconut cream, as well as Patagonian toothfish accented with mango, ginger and garam masala.

Signature highlights remain firmly on the must-order list. Tali Scallops nod to coastal street food traditions, while the Shahi Gosht Dum Biryani or slow-cooked lamb layered with fragrant rice delivers comfort with regal restraint.
Completing the experience is a reimagined bar programme that reinterprets Indian ingredients through a modern, global lens, offering cocktails that are as expressive as they are refined.

Nawabi Zaika and Sherawali Food Festival

This month, SanSara invites guests to savour the vibrant flavours of the Nawabi Zaika and Sherawali Food Festival. The limited-time festival menu is available for both lunch and dinner. Vegetarian and non-vegetarian set menus are priced at $98++ per person.
The vegetarian menu features standouts such as Chukandar Goat Cheese Asharfi, Khubani Kofta Curry, and Rabdi Rasgulla, while non-vegetarian offerings include Nawabi Murgh Shorba, Machli Ki Khatta, and Murgh Pistachio Korma. Each dish pays homage to age-old culinary traditions, reinterpreted with contemporary elegance.
Tiffin Sets
SanSara has recently introduced its Tiffin Lunch Sets ($48++ per set, each served in a traditional tiffin as a nod to India’s iconic dabbawalla culture and the enduring comfort of thoughtfully prepared home-style meals.

Each tiffin offers a three-tier culinary journey, beginning with a chaat appetiser, followed by a regional curry of the day served with naan or rice and a seasonal vegetable or meat accompaniment, before finishing with a traditional Indian sweet. Designed as a celebration of North India’s culinary diversity, the menu travels from the elegance of Awadhi cuisine and the royal kitchens of Lucknow to the robust flavours of Punjab.
Lunch highlights include Goat Cheese Makai Asrafi, a crisp sweetcorn tikki filled with creamy goat cheese, followed by Murgh Tikka Masala featuring clay oven-roasted chicken in a rich onion and tomato gravy. These are accompanied by Zaffrani Pulao – fragrant basmati rice cooked with ghee and caramelised onion—and chilli cheese naan.

This December, SanSara also introduced the Tiffin Dinner Set, expanding the concept into an evening offering. Served in a traditional copper tiffin, the four-course experience celebrates dabbawalla heritage through a progression from vibrant chaat appetisers to regional curries, seasonal sides and classic Indian desserts. The dinner set is priced at $88++ per set for two persons.
Dinner highlights include Gosht Seekh Kebab, Dahi Wali Machli and Kadhai Masala Singara Mutter, paired with Jeera Dhaniya Ghee Rice and Ajawani Laccha Parata. Pre-orders are required at least three days in advance.
