The Mini Tartes, a staple of the season, now look even more like mooncakes, swapping their previous square form for a circular one. The Caramel Apple, which boasts a buttery base of caramelised apples and almond cream, is topped with silky caramel cremeux and smooth apple compote; and the Yuzu Lychee, which brings together the bright zestiness of yuzu curd and a soft citrus madeleine with sweetly floral lychee jelly and airy mousse.
