The menu follows that same rhythm. During lunch, the focus is on comforting, easy-to-enjoy dishes that feel right for a laid-back afternoon. As the day turns into night, the menu shifts into something a little more polished, perfectly matching the upbeat evening atmosphere. Kept intentionally simple yet varied, the menu brings together Italian, western, pizza, and Indonesian favourites – offering something for everyone while staying true to Byrd House’s easy-going vibe from day to night.
With offerings ranging from Byrd Dining to the patisserie and bar, how do you ensure a consistent culinary identity across the venue?
We ensure a consistent culinary identity by staying true to our standards and traditional recipes, especially across the food menu. Each offering is developed with the same commitment to quality, flavour balance, and technique, allowing different sections of the venue to express creativity while still reflecting the core identity of Byrd House. We offer a wide range of dishes to suit different tastes and preferences, making sure there’s always something everyone can enjoy. The food feels modern but stays grounded in simple, familiar flavours, brought to life with a creative touch. This balance keeps the menu approachable and comforting, while still polished enough for special occasions and social gatherings.

Is there a dish on the menu that best represents your vision for Byrd House Bali?
Rather than being defined by one signature dish, the spirit of Byrd House Bali comes through in the balance and variety of the menu as a whole. As a chef, it’s honestly hard to pick a favourite. I work with so many different ingredients and techniques, and each dish has its own character.
Are there any ingredients or techniques you’re particularly excited to explore in upcoming menus?
For us, creating the menu is about curiosity and enjoyment. We love starting with local ingredients – what’s fresh, what’s in season, and what’s available around us – and building flavours from there. Then we add a few special ingredients from abroad to bring something new to the table. Lately, we’ve been especially excited about our truffle specials, which add a little indulgence without losing the comforting, easy-going feel we want our food to have. It’s all about keeping things fun, thoughtful, and true to the Byrd House experience.
