Along the shores of Tabanan at Nyanyi Beach, KŌRO Bali quietly makes its entrance, offering a gastronomic journey to remember. More than a new restaurant, KŌRO introduces the area’s first experiential gastronomic journey, one that invites guests to slow down and engage with food as a layered, sensory dialogue shaped by place, purpose, and craft.

Set within tropical gardens overlooking the Indian Ocean, KŌRO Bali feels deliberately composed. Modern lines are softened by coastal breezes and greenery, creating an atmosphere where architecture, landscape, and cuisine exist in balance. Dining unfolds as a progression – measured, thoughtful, and deeply immersive.
From the moment guests arrive, the atmosphere signals intention rather than excess. Modern architectural lines are softened by greenery and open coastal views, creating a space that feels contemplative yet contemporary. Dining at KŌRO is framed as a journey – one where time slows and each detail, from plate to placement, has been considered.

At the heart of KŌRO Bali lies a philosophy rooted in the science of Koku – the Japanese concept that explores depth, richness, and lingering sensation in taste, texture, and aroma. Here, modern gastronomy draws inspiration from Bali, Japan, and Italy, resulting in dishes that are layered and expressive without being overwrought. Each course is designed to unfold gradually, encouraging guests to engage fully with flavour and sensation rather than rushing toward a conclusion.

Yet KŌRO’s ambition extends beyond the dining room. The restaurant operates as an extension of the Bali Culinary Pastry School (BCPS), embedding education into its very foundation. Students are integrated into the Nyanyi Lab ecosystem, allowing them to learn within a real-world gastronomic setting – an approach that positions KŌRO as both a restaurant and a living classroom. It is a model built on the belief that sustainable hospitality begins with passion, mentorship, and opportunity.
Co-founder Eric Cocollos describes KŌRO as a reflection of his international journey through luxury hospitality, shaped by years in France and refined through collaboration and shared vision. His philosophy of savoir-faire and savoir-être is evident throughout the experience, from the balance of flavours to the unforced elegance of the space. At KŌRO, gastronomy becomes a means of connection between people, cultures, and generations of culinary talent.

Following its launch, KŌRO Bali is set to evolve further with seasonal menus, curated events, and exclusive dining experiences throughout 2026. Each iteration will continue to explore innovation while remaining grounded in craft and education. Open for dinner from Wednesday to Sunday, the restaurant offers an intimate yet forward-looking addition to Tabanan’s growing gastronomic identity.
More than a new opening, KŌRO Bali represents a shift in how dining can be experienced – where flavour is studied, hospitality is nurtured, and moments around the table are designed to linger long after the final course.
