Hotel Indigo Bandung Dago Pakar recently unveiled a fiery new addition to its dining scene with KARBON opening atop the building. Framed by Bandung’s romantic city lights and rolling hills, it goes beyond the typical grill house and bar with endless evening entertainment.

Channelling the raw energy of flame, every dish is thoughtfully curated and kissed by fire: premium cuts smoked and burnt to perfection, paired with craft cocktails to elevate the palate. From deeply charred steaks and aged butcher cuts to seafood and grilled vegetables, the menu transforms simple ingredients into exquisite delights through the art of fire.
“At KARBON, fire isn’t just part of the cooking process – it defines who we are,” Executive Chef Sydney De Hart states. “From the way we grill, the way we craft cocktails, to the energy we bring through music and design – everything starts with fire and finishes with attitude.”

The space is as inviting as it is striking, perfect for intimate moments with loved ones or lively celebrations with friends and colleagues. Enhanced by a dynamic modern lighting system, each corner offers an ambience to suit every occasion. For an elevated experience, step out to the rooftop area and savour a wood-fired steak paired with a timeless sip, as Bandung’s cool night breeze lends its own touch to the atmosphere.

Begin with a bold Char Bites menu, such as Smoke Jam (smoked brisket marmalade on grilled sourdough) or the daring Marrow Wheel (churro ring with burnt bone marrow and caviar). Explore the Fore Play with Grill Garden Octo and Charred Caesar. Mains shine in the Center Flame section, where signature dishes like FireWrap Picanha and Flame-Caught whole grilled fish bring dramatic, smoky elegance. Finish with playful flame-kissed desserts such as the 24-Hours Lemon or the show-stopping K-Boom.

The bar matches the culinary boldness with fiery, creative cocktails. Highlights include Fuego de la Tarde (a Paloma-inspired mix of tequila, yellow bell pepper, lime, agave, and pomelo soda) and the smoky-rich The Dark Sipper (peaty Scotch, salted coffee-hazelnut liqueur, espresso, gula merah syrup, and apple-wood smoke).
Adding to the buzz, live performances set the rhythm every dinner service, from upbeat band sessions to DJ sets that keep the crowd moving. For those with a curious streak, sit at the counter and watch the chefs dance with flame as they bring each dish to life.

Perched on level 16 of Hotel Indigo Bandung Dago Pakar, KARBON welcomes guests from 6pm to 1am on Wednesdays, Thursdays, and Sundays, and until 3am on Fridays, Saturdays, and public holidays.
