COMO Uma Canggu brings its 2025 COMO Culinary Odyssey to a poignant close with the Karangasem Edition, a collaboration with the acclaimed Bali Asli Restaurant, running from 14 August to 30 September 2025. This finale invites guests into the soul of East Bali through megibung, the royal court dining tradition born in Karangasem to unite communities over shared plates.

At the helm is Bali Asli’s founder and executive chef, Penelope Jane Williams, whose menu traces the stories, landscapes, and spirit of the region. Expect bamboo-steamed Sidemen red rice, fragrant jackfruit curry, and barbecued coconut curd prepared over coconut husks. Signature plates include Be Siap Mepanggang (baby Balinese chicken marinated in local spices), Pesan Telengis Gerang (smoky parcels of coconut curd, bean sprouts, and dried whitebait), and Tapé Goreng (crispy, golden fritters of fermented cassava).

This edition of COMO Uma Canggu’s Culinary Odyssey extends to Karangasem-inspired cocktails and mocktails, from the arak-laced Bali Beneath the Trees with gula pasir fruit and lemongrass, to the Sacred Spring, a cooling blend of lemongrass, tangerine, and ginger flower syrup.
