3 Sustainable Cocktails to Try at Portman’s Bar

This World Environment Day, Portman’s Bar at PARKROYAL COLLECTION Marina Bay, Singapore is rolling out a new kind of cocktail experience that fuses creative mixology with a commitment to sustainability.

From 22 May until 30 June 2025, head to Portman’s Bar to try three inventive Sustainable Cocktails, crafted by Omar Bodestyne, resident mixologist. Each drink is made using spirits crafted from upcycled ingredients that would have otherwise been discarded.

These limited-time cocktails are created with Discarded Spirits Co., a UK-based brand founded in 2018 by William Grant & Sons which embraces a circular approach to distilling. Overlooked or typically disposed ingredients like banana peels, coffee fruit and grape pomace are given a second life.

For one day only on World Environment Day (5 June), guests can look forward to a special surprise cocktail making a brief appearance on the menu. This limited- time creation is made with fresh herbs harvested from the hotel’s Urban Farm and accompanied by sustainably-sourced light-bites.

The trio of cocktails includes:

Rum-kindled, a warm and fruit-forward mix of Discarded Banana Peel Rum, lime juice, caramel and French vanilla syrup. The rum itself is infused with banana peels – salvaged from flavour houses –  dried and fermented to draw out a rich, dessert-like aroma then blended with Caribbean-aged rum that once seasoned whisky casks.

The Velvet Reclaim is a light yet layered cocktail built on Discarded Cascara Vermouth with vodka, lemon, sugar syrup and foam. Cascara is the dried husk of the coffee cherry – fermented and steeped to extract notes of red fruit and subtle spice, then blended with fortified wine that once seasoned whisky casks.

Chardonnay Revived, a bright, herbaceous creation featuring Discarded Grape Skin Vodka, Lillet Blanc, prosecco, lemon and rosemary syrup. The spirit is distilled from the pomace of winemaking, including grape skins, seeds, and stems. Blended with wine alcohol recovered from de-alcoholised Chardonnay, this vodka carries a refined complexity.
