Put the rest of the ingredients into a pot and when it starts to boil, add the sweet potatoes, yam and bananas and cook for another 5 minutes.

Cook time 15 minutes

2 sweet potatoes
1 yam
6 ripe pisang rajah bananas (available at local supermarkets)
4 cups coconut milk
6 pandan leaves, knotted
250g gula melaka (palm sugar)
50g fine sugar
3 cups water
1 tsp salt

• Cut the sweet potatoes and yam into bite-sized cubes and place them in a steamer until soft, about 10 minutes.
• Slice the bananas with a plastic knife and set aside.
• Put the rest of the ingredients into a pot and when it starts to boil, add the sweet potatoes, yam and bananas and cook for another 5 minutes.
• Serve warm or chilled.
