The hotel applies the farm-to-table philosophy to their Signature Yu Sheng (from $138) so you can expect ingredients like farm-fresh hand-shredded radish and carrots alongside fresh salmon slices with edible gold leaves, fresh Hokkigai clams and baby abalone. For a sumptuous one-dish meal that will please everyone, you can’t go wrong with the Wealthy Poon Choi ($298). It’s layered with assorted seafood delicacies, roast meats, Chinese mushrooms, and a collagen-packed pork knuckle that has been braised for over eight hours.
And what’s Chinese New Year without delectable snacks? Apart from handmade Lunar New Year goodies like the classic Traditional Chinese Coin Red Dates Nian Gao ($38/700g), crunchy Shichimi Togarashi Cashew Nuts and Caramelized Sesame Walnuts (each $28/200g), and melt-in-your-mouth Homemade Golden Pineapple Tarts ($28/250g). this year’s special is the Orange Chocolate Chiffon Mousse Cake ($38/1kg).
