Bar manager of the reopened Nutmeg & Clove, Leon Tan, swizzles up a Singaporean-ised Tiki cocktail.
50ml Ron Zacapa dark rum
30ml fresh mandarin orange purée
15ml fresh lemon juice
15ml fresh lime juice
10ml Cherry Heering liqueur
15ml gula melaka syrup
250ml house-spiced lemongrass tonic water
house-spiced lemongrass tonic water
couple pinches cloves and cinnamon
a few green cardamom pods
2-3 stalks lemongrass
1 can tonic water
mandarin orange wedge, lemon peel and orchid flower
- To make house-spiced lemongrass tonic water, mix all ingredients together.
- Aside from tonic and garnishes, add the rest of the ingredients into a Tiki mug. Use a swizzle stick for 10 seconds to bring ingredients together, then add tonic and top up with ice.
- Garnish with orange, lemon peel and orchid flower.
