Steamed baby abalone with tangerine peel

The succulent and sweet flesh of abalone makes this marine mollusk the crown jewel of the sea.

Serves 4  Prep time 15 minutes
Cook time 8 minutes

4 fresh baby abalones (about 100g each)

pinch of dried tangerine peel, shredded
a few drops fish sauce
a few drops peanut oil
pinch shredded spring onion
pinch shredded ginger

  • Wash the abalone and use a knife to shuck it from the shell. Remove the innards and grisly bits, you usually only eat the muscled part.
  • Mix all ingredients for the marinade.
  • Place on top of the abalone and steam on high heat for 3 to 4 minutes until cooked. It’s cooked when you see that the abalone has shrunk about 0.5cm.
