Pan-fried red mullet stuffed with otah fish paste
Tea leaves with glutinous rice also can also be an alternative to otah fish paste filling.

otah fish paste
300g mackerel, finely sliced
1 tbsp sugar
125ml coconut milk
200g DK7 spice blend
8 laksa leaves, shredded
- Add the ingredients, except for laksa leaves, into the mixing bowl and mix well. Then add laksa leaves.
300g red mullet
salt and pepper, to taste
1 tbsp cooking oil
- Clean and dry the fish. Cut away the head and remove bones from the centre of the fish. Stuff the fillet with otah fish paste.
- Score the fish, and season with salt and pepper.
- Heat pan with oil, and pan-fry the fish till golden brown. Then bake it in the oven at 180C for 10 minutes.
