FRENCH ROSE SALAD

spiced fruit salad

80g                     green apple wedges
80g                     mango dice
40g                     red onion  sliced
1tbsp                   red wine vinegar
2tsp                     brown sugar

spiced chickpeas

60g                        canned chickpeas
1 tbsp                     egg white(beaten)
1 tsp                       crushed thymes leaves
1 tsp                       toasted paprika powder
1 tsp                       brown sugar
1tsp                        allspice

dressing

3 tbsp                   olive oil
2 tbsp                   chopped shallots
2 tbsp                   red wine
1 tbsp                    red wine vinegar
pinch                    salt and pepper
60g                       mango purée
100g                     mesclun
200g                     iceberg lettuce
50g                       fresh edible rose petals

·         Combine spiced fruit salad ingredients together and mix well.

·         Combine ingredients for spiced chickpeas, and bake in an oven for 10 minutes at 150˚C.

·         Combine dressing ingredients together and mix well.

·         Assemble meslun, iceberg lettuce and rose petals, add spiced fruit salad and chickpeas, drizzle with dressing and serve.
