Drunken chicken with shaoxin granita and wolfberries
Talk about a high powered kitchen contraption. The Cuisinart blender’s 900-watt power means it does everything from making smoothies to crushing ice. It has a full boil heat setting so you can even cook your favourite soups in it.
Prep time 20 minutes
Cook time 20 minutes + 3 hours to refrigerate chicken until set
2 pieces boneless whole chicken leg
½ tsp salt
½ tsp pepper
2 tbsp ginger juice
250g ice cubes
1 tsp concentrated chicken stock
3 tbsps Shaoxing wine
spring salad mix
Shaoxing wine soaked wolfberries
- Season chicken leg with salt, pepper and ginger juice. Transfer to a large piece of cling wrap and roll up like a roulade. Tie up both ends and re-secure with aluminium foil. Steam chicken for 20mins and plunge into ice cold water. Allow to steep for an hour.
- Divide spring salad mix into four portions. Slice the chicken leg and arrange on the salad mix.
- In a high powered juice blender, blend the ice cubes, concentrated chicken stock and Shaoxing wine to get a simple granita. Spoon over chicken pieces and garnish with wine soaked wolf berries before serving
