Healthy tonic chicken soup

You may have pinched your nose while sipping it as a kid, but when your mum nagged you to drink soup because it was good for you, she wasn’t kidding. Black chicken soup is a healing broth— it nourishes the kidney, cleanses the blood and reduces fatigue. Riesling, with its sweet notes, helps to balance the herbaceous flavour.

Serves 4 Prep time 30 minutes
Cook time 1 hour

marinade
5 tbsp rice wine
2 tbsp soy sauce
1 tsp black sesame oil
1 tsp salt
10g rock sugar
1½ tsp pepper

1 black chicken
10 dried longans
6 red dates
1 tbsp red wolfberries
2 stalks spring onion
2 sprigs Chinese celery leaf
2 cm of ginger root, thinly sliced and cut to strips
2 sprigs coriander root
4 cups water
½ cup white wine, preferably Riesling

• Combine all marinade ingredients together well. Coat chicken with the mix and marinate for at least 30 minutes, or overnight.
• Place marinated chicken into a deep dish and scatter the rest of the other ingredients over the chicken. Pour in water till chicken is covered.
• Cover the dish with cling wrap.
• Heat up a double boiler and steam the chicken for 1 hour on high heat.
• Turn down the heat and simmer for another hour. Add more water if water bath runs low.
• Pour in Riesling and serve.
