Meet Alberto Donagrandi and savour his signature Napoli-style crust at Salsa Verde.
Fans of Grand Hyatt Bali’s Salsa Verde love the Italian restaurants for its welcoming open-air vibe and warm white dominated décor. The F&B hotspot has recently upped its ante on food quality with new pizza offerings. Since Italian chef Alberto Donagrandi arrived at the hotel in July for a guest stint, the kitchen team has been kept busy whipping up scrumptious Neapolitan-style pizzas. Donagrandi, who hails from a family of farmers and butchers in Bormio, enthuses about his pizza craft. “I believe that Neapolitan pizza is the best pizza of Italy. The process of creating the dough requires hand skills with no rolling pins. In turn, this manual labour gives the pizza an al dente crust after it is being baked,” he explains.
True to his statement, a bite of the Burrata (Rp183,000) with a generous topping of burrata cheese, mozzarella, parma ham, basil leaf, tomato sauce, rocket salad, and pistachio is enough to make you reach out for another serving. Be it the oregano sprinkled, anchovies filled Marinara (Rp175,000) or an aromatic mushroom with black truffle oil pizza (Rp173,000), the Pizza di Donagrandi special has proven to be a huge hit among the hotel guests.
