There’s never been a better time to visit Man Fu Yuan – InterContinental Singapore’s stalwart Cantonese restaurant – than now. The menu has recently gone through a refresher and flaunts new highlights of handcrafted dim sum, appetisers, soups and mains. The establishment has spared no expense in sourcing the freshest seafood. The
best catch is flown in from nine countries and prepared in various styles. Hand-dived scallops from Norway are steamed in Chinese rice wine consommé, Australian lobster comes coated with buttery salted egg yolk, and sea mantis from Indonesia is baked with stewed rice in a stone bowl. There is something for everybody, even those who prefer to stick to perennial favourites like roasted suckling pig and egg custard buns that are prepared three equally delicious ways – steamed, deep-fried and encased within a coat of decadent deep-fried sweet potato.
